Greek Potato and Courgette Bake

Bring a little bit of Greece to your kitchen this month with our summery Greek Potato and Courgette Bake recipe.
Ingredients
- 2 tbsp olive oil
- 500g Maris Piper potatoes, sliced
- 1 medium courgette, sliced
- 1 medium red onion, peeled and sliced
- 800g/2 tins chopped tomatoes
- Small bunch of fresh parsley, chopped
- Small bunch of fresh oregano, chopped
- Sea salt
- Cracked black pepper
Method
- Preheat the oven to 180˚C/160˚C Fan/Gas 5.
- Place half the sliced potatoes, the courgette and red onion in a tray, season with salt and pepper.
- Pour over the tomatoes and olive oil, the sprinkle with the herbs - hold back a little parsley for garnish. Toss all the ingredients together to ensure that they are well combined.
- Top the dish with the remaining potatoes and bake in the oven for about 45 minutes until golden brown and the potatoes are tender.
- Sprinkle with the reserved parsley and serve.
