Greek Potato and Courgette Bake

Bring a little bit of Greece to your kitchen this month with our summery Greek Potato and Courgette Bake recipe.

Ingredients

  • 2 tbsp olive oil
  • 500g Maris Piper potatoes, sliced
  • 1 medium courgette, sliced
  • 1 medium red onion, peeled and sliced
  • 800g/2 tins chopped tomatoes
  • Small bunch of fresh parsley, chopped
  • Small bunch of fresh oregano, chopped
  • Sea salt
  • Cracked black pepper

Method

  1. Preheat the oven to 180˚C/160˚C Fan/Gas 5.
  2. Place half the sliced potatoes, the courgette and red onion in a tray, season with salt and pepper.
  3. Pour over the tomatoes and olive oil, the sprinkle with the herbs - hold back a little parsley for garnish. Toss all the ingredients together to ensure that they are well combined.
  4. Top the dish with the remaining potatoes and bake in the oven for about 45 minutes until golden brown and the potatoes are tender.
  5. Sprinkle with the reserved parsley and serve.
