Three recipe favourites to try...

If you're looking for some inspiration or ideas for nourishing recipes to try, we're sharing some of our favourites from recipe book Nourish as part of Malnutrition Monday 2023.

Nourish provides a range of food and drink recipes to encourage and support a nourishing diet for those suffering from weight loss and/or poor appetite. Developed by Kathryn Duff and Shelley Hindes from the Northern Health and Social Care Trust Dietetic Prescribing Support Team, the recipe book includes:

  • main meals
  • light meals
  • snacks
  • shakes and
  • desserts.

Today we're sharing the recipes for a delicious Fruit Punch Shake, Pasta Carbonara and a No Fuss Bread and Butter Pudding!

For a tasty, nourishing shake, try our Fruit Punch - it's so easy to prepare!

 

 For a flavourful main meal, why not try our version of a Pasta Carbonara...

 

 Method

  1. In a bowl, add the eggs, then finely grate in the Parmesan. Mix well with a fork.
  2. Cook the pasta according to packet instructions.
  3. Add the oil to a pan on a medium heat and add the sliced garlic. Stir in the bacon and cook for 4 minutes, or until they start to crisp.
  4. Drain the pasta, reserving some of the cooking water. Add the pasta to the pan with the bacon and peas. Stir well until all ingredients are combined.
  5. Remove from the heat, add a splash of cooking water and mix well.
  6. Pour in the egg mixture, stir then return to a low heat. Add more of the cooking water until the sauce appears glossy.
  7. Serve in bowls with some grated Parmesan on top.

And for a no fuss traditional dessert, here's our Bread and Butter Pudding.

 

Method

  1. Butter the fruit bread on one slide.
  2. Cut the slices into triangles and arrange butter side up in a buttered ovenproof dish.
  3. Sprinkle over the sugar and cinnamon.
  4. Beat the eggs and set aside.
  5. Gently heat the milk in a pan without letting it boil.
  6. Talk the milk off the heat and add to the beaten eggs.
  7. Pour the mixture over the bread and leave to soak for 30 minutes.
  8. Pre-heat the oven to 160 degrees Celsius (140 Fan/Gas Mark 3).
  9. Place in the pre-heated oven and cook for 40 minutes.
  10. Serve with custard.
