Spinach, Cherry Tomato and Basil Salad

Try this light salad, full of the flavours of summer!

Ingredients.....

250g cherry tomatoes

1 tbsp olive oil

1 tbsp extra virgin olive oil

1 tsp caster sugar

1 tbsp red wine vinegar

2 garlic cloves, crushed

Small bunch of basil

250g ready to eat spinach

 

Method....

1. Halve the tomatoes and place in a bowl

2. Whisk together the oils, sugar, vinegar and garlic to make the dressing

3. Chop the basil and spinach and add to the tomatoes

4. Just before serving, pour over the dressing and mix gently.
