Breakfast Muffins, Makes 12

130kcal and 9g protein per muffin

Ingredients

5 eggs

150ml whole milk

80g Cheddar cheese, grated

12 slices of back bacon

60g diced pepper

60g diced red onion

Method

1. Pre-heat oven to 190C/Fan 170C/ Gas 5.

2. Butter a 12-hole muffin tin and line each hole with a slice of bacon.

3. Beat the eggs in a bowl with the milk.

4. Mix the peppers, onions and cheese together with the egg mixture then pour evenly into the muffin tin.

5. Bake for 25-30 minutes until the bacon is crisp and the filling has puffed up, then enjoy!

Make a batch in advance then store in an air tight container in the fridge for up to 4 days or in the freezer for 3 months.  Defrost in the fridge overnight and heat them up in the microwave when you are ready to eat.
